Green Eggs & Ham!

Every child has a favourite book that they remember from their childhood, and today I thought I'd share with you my favourites... The Very Hungry Caterpillar - evident from all my food posts recently? - and any of the Dr Seuss' books including Green Eggs & Ham.

Last year on one of my rare weekends off, me and a flatmate spent the weekend in bed watching films, got up as the sun set and had green eggs & ham as our main meal of the day. Not going to lie, it was a weekend of memories and this was the recipe that I learnt - told you in a previous post I would and here it is!

What you will need for the Green Eggs & Ham:
- 110g plain flour
- 2 eggs
- pinch of salt
- 200 ml of milk mixed with 75ml of water
(either that or a pre-prepared pancake mix)

-1tsp of pesto (or add to taste.)
- bacon (whatever type you fancy... smoked/unsmoked/rashers/thick cut....)

All you need to do:
Make the pesto pancakes by adding the first four ingredients on the list together, whisk thoroughly until it has the consistency of cream...
Stir in the pesto and make sure it is mixed thoroughly.
Preheat pan and add butter/oil to stop the pancakes sticking.
Fry as you would with normal pancakes.
Fry/grill bacon (depending on whatever works best for you)
Serve & Voila! Green Eggs and Ham, straight from Dr Seuss' imagination.
